Camp Bok Recipe: Mango Lassi Popsicles

A favorite treat of many Indian families, mango lassi is basically a yogurt-based mango milkshake or smoothie. This recipe combines fresh mangos and exotic flavors into a handheld treat.

You can use any type of popsicle mold or use paper cups and popsicle sticks.

Honey, yogurt, and cardamom are classic Indian flavors and offer creaminess, sweetness, and spice.

Mango Lassi Popsicles

Equipment

  • Food processor or blender

Ingredients
  

  • cups chopped mango (about two large mangoes
  • 1 cup Greek Yogurt
  • 3 tbsp honey
  • ¾ tsp ground cardamom
  • 1 tsp lime juice
  • 1 pinch salt
  • ½ cup water

Instructions
 

  • Process all ingredients in a blender until smooth.
  • Transfer mixture to popsicle molds, freeze for 1 hour and then put the popsicle sticks in place.
  • Transfer popsicles back into the freezer and freeze until firm, 4-5 hours.

    Very nutritious. Excellent way to use mango. I absolutely love mango in everything! Sounds very easy to make, and very refreshing for the summertime.

    I used to have an ice cream maker and I used to make a lot of frozen treats.

    Please offer us more recipes using tropical and subtropical fruits and vegetables. Keep up the good work!
