Camp Bok Recipe: Strawberry Watermelon Ice Pops

August 3rd is National Watermelon Day! Cool off with this frozen treat that combines fresh watermelon with sweet strawberries! What a winning combination.
The sweetness for these pops comes directly from the pureed fruits – no sugar needed! Look for fresh from Florida produce at your local supermarket. Watermelon and strawberries are in season.

Strawberry Watermelon Ice Pops

  • 2 cups fresh watermelon (de-seeded)
  • 1 medium lemon
  • 10 medium strawberries
  • ½ cup water
  1. Blend together watermelon and strawberries in a blender. Squeeze lemon and add juice to fruit puree. Add water to taste – depending on your sweetness level – you can use more or less water.
  2. Pourinto ice pop molds and freeze for 4-6 hours.
